Our certified organic gardens (CRAEGA) are located in Trasellas, just 300 meters from our flagship restaurant, Fogar Orixinal, in Teo.
Guided by respect for the land and ancestral knowledge, we grow fresh, seasonal, 100% organic vegetables that supply all our restaurants.
We are “Druids and Farmers” — guardians of a way of cultivating rooted in traditional wisdom and sustainable innovation. Over 10 hectares of farmland, where we apply the principles of agroecology, food sovereignty, and a circular model to nourish people and protect our territory.
Our Farming in a Few Key Facts:
> We cultivate 10 hectares of certified organic gardens
> Certified by CRAEGA (Galician Organic Agriculture Council)
> Located just 300 meters from our production center; true zero-mile food
> Local sales of our fresh seasonal produce
> Focus on native and traditional plant varieties
> Full self-sufficiency: all our restaurants are supplied exclusively by our own gardens
> Daily surpluses are transformed into preserves, sauces, and artisanal ice creams
Every day, our organic garden supplies fresh, zero-mile produce to our production center and all our restaurants.
Certified by CRAEGA, we apply agroecological principles in the design, yearly planning, and selection of everything we grow.
Our crops change with the seasons. In winter, you'll find traditional greens like "Asa de Cántaro" (Galician collard greens), leeks, cabbages, and of course, our beloved "grelos".
In summer, the garden bursts with color: Black Tomatoes from Santiago, eggplants, zucchini, and the famous Padrón peppers… some are hot, some are not.
Other vegetables like carrots and onions grow year-round, while crops such as lettuce and our herb blend for the “Green Fields of Fogar Salad” are cultivated in greenhouses.
Our Carta Meiga (Magic Menu) evolves with the seasons — because it depends directly on what we grow.
Come taste our Grilled Garden Veggies of the Day, the whimsical "Tempura of the Wicked Rays", the legendary "Druid’s Broth", our beloved "Grelos Croquettes", or the "Grelos Empanada with Farmhouse Cheese"…
And if you’re dreaming of our Black Tomatoes from Santiago or Padrón Peppers, you’ll have to wait for the season... we’re counting the days too!
